You need to use 3rd party solutions such as: nbeqo.com - Printing Solutions

For single use, a user may enter "retention" settings in the print driver, allowing them to set a password to retrieve a confidential print job at a later time. On the scale of 200 employees, it would seem a bit tedious however.

Why not sell them the IC card reader? Each employee could swipe their card and retrieve their documents.

Failing to plan is planning to fail!!!

On Windows 7, it's under printer preferences and job handling of the printer, first checkbox in the top saying "retention", enter a username and password. A tad redundant for 200 employees though. Mojorolla's suggestion seems much more practical.
