Hey Andy, I just had a look at my old Service manuals, and was reminded that the AF2027, etc. had the controller board that you had to access from the rear of the machine whereas MP2510 (Savin 8025), etc. had the controller that slides out the side so the brackets and connectors are a bit different, but the older AF2027 just used a short IDE cable without the need for the additional ac power connector, so knowing you, you can probably rig up something to hold the HDD in place well enough, and I'd expect the IDE connector from the 8025 to work ok.
Oh, and yes, they're 2.5" drives. (I think the 2027 was a measly 40Gb)
