Is there anyway to have the default sender with scan to email be the person that is sending the email rather than the SMTP Auth email address be included every time, even if you have the Auto specify sender name turned off ?

Address book check the box, but don't recommend using it that way. Stick with the default sender
If you require user code authentication in order to scan, the sender will be the address associated with the user code used, provided it is set for Use as Sender. If the user does not have an stored address, then it will use the the address stored as the administrator and Auto specify is ON.
FYI, I would suggest that all email addresses used as senders have the same @domain as the authentication address otherwise there are some online, POP and IMAP server that will bounce the emails back to the sender a potential malicious content.

So you can set "use name as sender" and un-check use default sender which helps, it then says it comes from that person but then in <angle brackets> it says the default gmail account that it authenticates with.
