Try it, nothing to lose! I'm not sure if the NIC's in the Fiery are auto switching so a straight through cable may also work.
It's 106 miles to Chicago. We've got a full tank of gas, half a pack of cigarettes, it's dark and we're wearing sunglasses.
Hit it.
I believe the cable is indeed a crossover cable. I have never tried a straight cable. Easy enough to remedy with a crimper and a cable end.

I’m about 100% sure it’s a crossover.
Try it, if it works, you may want to pony up and get a Cat 6 grade crossover. That’s what the original was.
The specs are much better on a Cat 6 compared to Cat 5. I highly doubt that there is any correction (or tolerance) between the Fiery and the copier.

Any Cat 5e cable will do . Doesnt have to be a crossover
Connect interface cables:
• Network straight-through cable to the upper RJ-45 port
on the E-41 back panel and customer network.
• Ethernet crossover cable to the lower RJ-45 port on the
E-41 back panel and the Gigabit Ethernet connector on
the copier/printer.

I just checked the product support guide for the Fiery.
Not only is it a crossover, but the original was 39.3 feet (or 12 meters) long.
While that seems overly lengthy, and most likely is in almost all cases, keep in mind that you may need that length as this is a production machine, and it can grow quite large if enough of the available options are added.
While the PSG does not mention Cat6, it would be suicide to use Cat5, as it is a true Gigabit connection. I would think it would cause weird printing issues that would manifest themselves in all kinds of cute and creative ways. As I mentioned before, there is near if not zero error correction or tolerance, as there would be in a “normal” network.
