The only thing you can track is when the machine sends a fax or receives one, and how many pages. The contents of incoming and outgoing faxes can not be tracked, as far as I know.

for tracking incoming. turn on fax rx forwording to a folder. to track outbounds, go to fax features-send settings tab. turn on backup tx files. point it to a folder.

    Good Luck

They want to track how many clicks each user does? Or they actually want to see the contents of the print/copy/scan/fax jobs?

I suggest it would probably be easier for them to just lock out the machine via user codes or similar to prevent unauthorised usage because there's nothing (for Ricoh machines at least) that I know of that actually tracks the content of jobs going to and from the machine. Something about a customer wanting to go to that kind of lengths suggests to me that they don't trust their staff, it's a bit Big Brother-ish.
