Just curious, what model MFP(s) are you working with?
Depending on the age of the MFP, it may not support folder scanning, or even email, for that matter.
If folder scanning isn't supported on the device(s) in question, one possible solution may be to upgrade the PC to XP, install SR Lite, and have it scan to local folder(s).
You can then use some very inexpensive shareware to watch those folders, and have it move the scanned files to a folder anywhere on the network.
The only drawback to the shareware piece is that some IT admins shun the idea of any middleware on the network, and won't allow it. In a small environment, that's not usually the case.
If the MFP can scan to email, you can have IT set up an account for it to use for email scanning, then set up a rule (or rules) on the email server (hopefully Exchange) to route the attachments to folder(s).
Maybe it's time to upgrade to a 21st century MFP?
