I can almost guarantee this is correct.
I had this exact issue with running #10 envelopes through this machine. The solution was to run the envelopes with the flap open long edge first, because we would get occasional jams otherwise.
I'd also agree it is probably an ITB issue. Check the tension roller, I had similar issues when a tech didn't tighten one of the screws all the way.

This is happening because when you have a Fax Forwarding destination selected, you chose the email under 'Internet Fax'. Choose the heading called 'Email' instead.

The SMB version should be exactly the same between Win 8 and Win 10, so there shouldn't be any difference.
The 3140/3150 has had about 7 firmware updates. 5 of them revolve around paper stacking/stapling. I'd go that direction first.

You didn't do all of the SP mode settings in the manual. If you do the first set and not the second, you get exactly this issue.
Unless you have figured out a way to do batch firmware updates with remote, remote firmware is MUCH slower.
The 4503/5503/6003 series is very sensitive to SD cards. If you can't update firmware:
