In addition to the firmware update, clear the job log, and optimize the HDD. You should see some improvement in the response after rebooting (until the job log fills again).
The panel will run slow because the UI program is located on SD card and reading/writing can't keep pace with the input.
Newer models have the UI located on the CF card which has a much faster read/write speed.

Keep an eye on it....we thought we had fixed that problem by upgrading firmware, and a week later the problem came back. We ended up backdating the firmware on more than one machine to fix this.
We have turned off the Wsd protocol and that seems to solve slow responding Displays for us .
Machine web page, network settings, printer port setting, WSD disable.
Actually its in both spots.
