An interesting thing about that list of what fats/oils to avoid, walk down your baking/cooking oil aisle in your local grocery store and what major brands do you see? Mazola - corn oil, Crisco and Wesson - canola oil, Saffola -safflower oil. And what do they often recommend for those with high cholesterol? Corn oil, canola oil and safflower oil. I prefer to use butter and bacon grease. Corn oil and canola oi do not IMHO make good gravy. As for safflower oil, my older sister is highly allergic to safflower. For spreadable I use either whipped butter, if I remember to take it out to soften, otherwise I use spreadable butter with olive oil.
