    Tried making some onion rings. Result was better than most takeout joints. Wondered why some places makes them decent and other are just a mess.

    Trick seems to be in chilling the onion rings in ice water before dipping them in the batter to fry.
    Used garum masala and salt in the batter and just a touch more baking powder than normal batter.

    Any other tips?

    For those who like fries, try dipping them in 1000 Island Dressing instead of ketchup. Much more flavor that way.

    Pesto is one of my favorite things but who can afford pine nuts. They are not easy to get here and the amount my apatite require makes it difficult. Was talking to the Indian lady at the spice shop about pine nuts and if she can import them when she asked me if I have ever tried water melon seeds. I have used pumpkin and sun flower seeds but had no idea about water melon seeds. Bought about a pound of it at a very reasonable price.

    They roasted well but are not quite as oily as pine nuts but they did work real well. Made some basil, mint, and coriander pesto respectively. Its simple, some salt garlic oil and vinegar and presto have some pesto.
    Sometimes Parmesan is called for depending on the need.

    Any pesto recipes that works well?

    Pine nuts which I believe are the richest in oil content of any nut, have always been expensive and hard to find. Nice to know about water melon seeds.

    Pine nuts can be replaced with walnuts, not bad at all.
    As per ingredients I prefer KISS principle. Basilic, salt, nuts, olive oil, garlic, Parmigiano.

    Peanuts works real well with mint. I struggle to grow basil here but perennial wild basil grows easy but to strong for pesto IMO. I like to use whatever I can find.

    My favorite food is definitely Paella Rice. I like rice because it is a very tasty and healthy food. Paella is a national Spanish and Valencian dish made of rice, colored with saffron, with the addition of olive oil. In addition, seafood, vegetables, chicken, white wine, herbs and spices may be added to paella. In some regions of Spain rice is replaced by beans.
