What fiery are you using on the 7100?
Does the fiery have the media upgrade kit to be able to support white underlay?
Without it you can't do it

We bought this machines at a liquidation house. It has the extra pump and white toner etc as if its set up for it. I just dont see the settings for it. Is is something needing from Fiery ? I am sorry to be so helpless on this. We have hit a wall and we are toast on a good solution. Spinning our wheels
Hello.
On that model, you need to do it manually on two passes.
First you put the black paper through and print only the white color.
Then you put the paper back in the drawer (with the white printed on it) and proceed to do a second pass with the CMYK part of the job.
If I'm not mistaken, the 7200 allows you to swap the K and S units around, so S goes first - but I never tried or confirmed this...

It's 106 miles to Chicago. We've got a full tank of gas, half a pack of cigarettes, it's dark and we're wearing sunglasses.
Hit it.
So, how did it go?
