You cannot delete it, but you can default it to something else (such as "Plain") that will prevent the machine from switching to other drawers that match the size, but have a different media type in them, such as checks or letterhead.
the driver is defaulted to Plain. but if for some reason a user touches the source section and even if they are selecting the tray that has the plain paper, media type switches to Unspecified.
You should have them always choose the media type they want to print on and not the source; if the media types are defined correctly in the drawers, the machine will automatically find it and not switch to other drawers.
Rather than telling me how the drivers are configured and used, I was told that it was just window printing that they were having issues with.
Turns out, windows printing was working fine. the customer has a systems which every user has their own set of 4 printer object on print server1(print server had close to a 100 printers). depending on what they are printing, they select the specific driver that will send that specific job to a specific tray. after they hit print, the job is sent to print server1 using an HP driver than passes that job onto Print server2 which sends it to the Kyocera using KX driver. Somewhere along the way, the media type instructions are lost and so the KX driver send the job to the printer with a media type of unspecified.

Copyman, You may have different defaults set on the server than the clients (very common). You could also be pulling settings in from the HP driver. It is possible that the system is not using the Kyocera KX driver at all, just the port; an easy way to tell is to do a data capture and then look at that print data with a hex editor, Notepad +, or even notepad. If you see some references to Kyocera in the print job header, then it should be using the KX driver. If you don't see any Kyocera reference in the header, then it is probably not using the driver, just the port.
On the kyocera driver, under preferences, select tray to auto and paper type to plain. whenever a job is sent, the relevant tray is automatically selected. You can also do and setup custom profiles in the driver, specifiying the specific tray and its properties.

When setting defaults, I like to do it in two places to be sure it will stick -
1) Devices and printers -> right click and go to printer properties -> advanced tab -> Printing Defaults button
2) Devices and printers -> right click and go to printing preferences
75% of the time when I select my default options from printing defaults, it will carry down to the printing preferences, but sometimes it doesn't and I need to go into the printing preferences as well to set the default.
Sometimes it seems programs will default to whatever is set in the printing default button rather than printing preferences. Rare, but i've seen it.
