    CUPS

Open Safari or any other Web browser

    localhost:631
    or
    127.0.0.1:631

    Manage Printers, Change Defaults

You'll need to enter the User name (case and space sensitive) and password to take effect

I think you need to login as "root" to save the settings, if the root user isn't enabled read this:
Enabling and using the "root" user in Mac OS X

just another angle at this, hope y'all dont mind.

Mac doesnt have a permanent/default setting as Windows. But one could set b/w as a profile or use "last used setting."

OSX does have a default system similar to Windows from OSX 10.4 and up. Go to http:// localhost:631 next time you are on a Mac and have a look.

jmaister also has another good point of using presets as some software with in the OSX system will over ride the Black and White setting of the PPD even though it is defaulted with CUPS.

Go in to some like Safari or what ever you want and go to print. Make the setting change from Colour to Black and White (or Greyscale). Next, drop down the menu named Preset and will find a save as option. Name the preset to something Like "Photocopier B&W" and save it. After a couple of prints, you will find that the preset will be used everytime you select that printer.
Please don't ask me for firmware or service manuals as refusal often offends.
