I'd be willing to bet Binary division is set to ON.

You're hitting the 2 MB (2048K) default setting for the maximum email attachment size on the MFP. When the machine hits this limit, it will split the file into multiple .dat files.
The best thing to do is ask the IT person what the maximum size their server will allow, and set your machine to that. Turning it "off" is generally a bad idea, unless there is no limit on the server.
BTW... to reassemble the files:
1). Put all the .dat files in the same folder.
2). Open a command prompt, and go to that directory.
3). Type "copy file1.dat + file2.dat + file3.dat myyfile.pdf". (No quotes, and substitute the dummy file names with the real ones.)
4). That's it! You have now just concatenated the files.

This is the Long way of doing this. If you can rescan these files and your email client allows large attachments I would change your default file size limitation on your Copier from 2mb to something like 15000kb

You can also turn off divide and send in scan settings.
