Ricoh MPC 3500 Full Colour set as default

I've just been refurbing an MPC 3500 we bought in, ready to go but the previous owner/supplier has got full colour copying set as the default. How the hell do I change it back to black and white? I've been through all the system settings/copier document server features and I can't see bugger all. I hope i'm not being a retard and it's staring me right in the face. If so i'm blaming starvation, in which case i'm going for some lunch right now. Cheers.

Set the copy display to the settings that you want as defaults. Press the "Program" button. Select "Program as defaults"

Diamond button with arrow pointing out of it. (to the right or left of the yellow button)
then on the screen top right set program as default.
How your job is set up when press will remain the default for when the yellow button is pressed.

Or would that be "Mr. Ears"?
