In Web Image Monitor it is in Scanner Settings I believe, the lower right part of the screen if I remember correctly. Not sure what the title of the setting is though, something like "scanning destination type" or close to that.

Do this from the device, not the WIM-
>Press the Scanner function (hard key)
>select "file name/type" on the touchscreen
>select "multipage PDF" on touchscreen
>Press the Program hard key on the top right of the control panel
>select "Program as Default" on touchscreen
>confirm "ok"
