How do I default this one to copy and print only in black and white. I tried to turn admin on first and I don't see it.

Copy :
Set the machine to B/W in the Copy Screen. Press the diamond-button with the arrow and select Program as Default.

Print :
On the PC/Server : Printer Properties - Advanced - Default Settings

Exactly right.

There is no way to force a print job that is sent as color to print in B&W - I've had that question come up countless times.

You can block colour printing if you really want in address book management and user settings.
