What version OS? Which PPD is installed? Most of the features are buried in the driver and depending on what OS you have it can be different ways of navigating.

In Snow Leopard 10.9.2 if you click where it lists Layout and choose Job Log the options for Sample,Hold,Locked,Store,Store and Print, and Document Server are available there for choosing directly under Job Type:
