If the device has the PS installed and the Mac has a PS driver installed the option must be in driver somewhere. We are both talking about rotating sort though right?
Also make sure you actually have 1 tray LEF and one tray SEF of same paper size and type for rotate sort
Make sure you have the Ricoh PPD for that machine on the MAC. Don't use the native driver that the MAC offers because it won't show all the options. There is a lot of good info here on the CTN site that will guide you on how to load and configure the PPD correctly. If it can be done on a PC it can be done on a MAC.

Is the finisher listed in the device options of the PostScript driver on the Mac?
Most problems with finishing I see come from the correct options not being added in the driver settings so as far as the driver is concerned there's no finisher or high capacity tray, etc.
