That is basically the answer. Update the thermistors to part numbers AW10 0131 and 0132 and fit the modified brackets and thermostats. That should sort you out.
It's 106 miles to Chicago. We've got a full tank of gas, half a pack of cigarettes, it's dark and we're wearing sunglasses.

    Hit it.

Poor voltage/amperage can also cause this. I had a few of these that weren't getting enough amps from the wall thanks to a few too many devices running from the same circuit.

          Check your power...

If are you using non OEM heat rollers this could cause a problem also.

Make sure that you have not accidentially swapped the Blue, Green or White plugs on the rear end of fuser unit. (easy to do after a rebuild)
If you do make this wiring mistake the fuser unit will turn on the wrong heater lamp at the wrong time and the thermistor heater timing will be in error.

There is also a mod bulletin for the thermistor mounting frames for the MP7001 similar.

We had the same problem, replaced the therms, and the mod bracket, even replaced the whole fuser. It usually happened on monday mornings, after machine had been in stand-by over the weekend. And usually in winter when it was cold. So we turned, "AOF"- off in user tools. This ment that it will never go into "power save". So no heat up failures. But then you have to set in SP mode,(I can't remember at the mo which ones) for the fuser to rotate at certain intervals, to prevent flat spots on the press roller.
