I realize you have probably given up by now and I think that is best as it is probably that the PS file you installed does not support 11 x 17.
The problem with using postscript on machines designed for PCs is there are often features that are not supported.

Sounds like the machine is printing through AppleTalk not TCP/IP, which is why the configuration utility is not working. You'll have to enter a valid IP address for your network, then rerun the configuration - the mac should pick up the paper tray settings automatically. It probably is time for a tech - get an estimate beforehand and make sure you get one who knows about OSX, as they're pretty rare and you don't want to pay somebody $125/hr to scratch his head (or any other part of his body...) In NJ you can hold a vendor to within 10% of a written estimate
