When you select a tray on the printer screen after getting a paper type mismatch, it uses the paper type as specified in the machine settings for that tray, which would explain why it's going through on plain settings. These machines do exactly what you tell them, sometimes the hard part is knowing how to tell it exactly what to do.

I can vouch for that!...computer print driver settings AND mfp settings matched has fixed it for me before!

This might be stupid, but is the print driver set up correctly?
It kind of sounds like a bad setting there to me. Could be in the tab where you set up the machine's accessories.
