I'm a "Sharp" guy, not Toshiba........

First thing to determine, is there a firmware upgrade to the Toshiba's in question to enable SMB 2.0 support.

I believe you have answered your own question when you say, "Recently started having problems with scanning to folder with my toshiba copiers. This all worked fine until we disabled SMBv1 on all of our servers. "

    Your Toshiba's don't support SMB v2.

    Options if unable to upgrade....
    Scan to ftp
    Scan to email
Set up a Win7 box to act as a "scan server"

Even simpler: Many of our customers opt for scanning to the MFP's HDD file_share folder. The scan sits on the MFP's HDD and is shared out. To retrieve your documents, from the endusers PC simply:
      Run: \\192.168.1.200\file_share then Enter

The only drawback is that there is a timer. Within 2 days you have to move the file or it will disappear. It's a safety to prevent the HDD from becoming cluttered with old documents. =^..^=
If you'd like a serious answer to your request:
      1) demonstrate that you've read the manual
      2) demonstrate that you made some attempt to fix it.
      3) if you're going to ask about jams include the jam code.
      4) if you're going to ask about an error code include the error code.
      5) You are the person onsite. Only you can make observations.

Currently only e-BRIDGE Next series machines support SMBv2 which is disabled by default.

Any series machine under that do not support anything other than SMBv1, there may be new firmware to support v2 later this year but don't hold your breath.
No, I will not send you Manuals, Software or your own little repair Genie to fix all your problems for you.

We actually just received a bulletin regarding this today.

Long story short, its due to the latest Wannacry Ransomeware attacks and how Microsoft have released a patch to remove the vulnerability in SMB V1.0

Some people have been, as you mentioned, disabling SMB 1 but there is no support for V2 in the EBX2/1 series, hence disabling the whole scan to file function.

The latest info we have is that EBx 2 Series will receive a firmware update sometime in September and EBx 1 Series will receive a firmware update in December.

I've read the same bulletin I was being discrete (since it was at the time confidential only)
