I always recommend against No Limit. If that's on, then whatever settings you last used will be up for the next user. So if you did 500 copies and then walked away, the next person will walk up and it will still be set on 500 copies. Lot's of room for unwanted actions there. I'd try 150 seconds. You might still need to train users to double tap the Function Clear button (the yellow key above the green start button) to be sure and reset all functions to default when they're finished if there are a lot of people using the machine throughout the day. But the 150 seconds will let you see if this is even the cause of your problem.
Why does every customer think they're the first one to ever say: "you've been here so much we should get you an office, ha, ha, ha"?

My guess would be using the Preview feature would not register an error in the log, it's not a job yet. Perhaps mixed originals using Preview is causing this, try scanning without using the Preview feature. In Copy mode, Mixed Originals is found under the Original button, to the right of simplex/duplex.
As to the file size and timeout, they can be found in the machine's webpage under ADMINISTRATION>EMAIL>SMTP CLIENT. At the bottom of SMTP settings is time out and attachment limit.
Auto clear setting is 45 seconds by default, it can be found in webpage under ADMINISTRATION>GENERAL>scroll down to ENERGY SAVE.

Failing to plan is planning to fail!!!
