Making stapled sets on the Versant 80 or C75 (both have light production finishers), using text gloss paper, it will staple up to 5 sheets. Why not more?

When thicker paper settings are applied, the staple capacity can decrease depending on type and weight of paper being used and other conditions.
Found this in the CED document on the machine.. It can staple 100 pages at 80gsm.
Try setting your paper to plain 80gsm and see if it will staple the amount you need... Just as a test.. On plain your toner will flake and make a mess using gloss paper...

Dech1's comment is perfect for confirming that the type of paper is causing the limitation.
You mentioned that it is TEXT gloss paper, so it isn't all that thick. You can probably redefine it as a lightweight cardstock (not glossy) and it will produce enough heat to fuse the toner properly.
I suspect that the gloss designation is the main culprit as to the reduced stapling capacity, not the designated paper weight. (Within reason...)
How about using a lighter weight paper or consult the printer's manual for any specific guidelines or alternative methods for stapling thicker paper types?
