... have you had a chance to print on plain 20 lb bond paper with the C2100? Your thoughts on the image quality? On the MFP overall?

All of the Epson MFP's are not meant for high quality color. What they are good at is outputting at high speeds. The color looks decent, but coming from Sharp and Kyocera, it doesn't compare. Also, sales reps LOVE to conveniently not ask the customer about doing high quality printing before selling them. The only real downside to the Enterprise series (WF-C20750,C21000,M21000) is if the customer is using very cheap paper, there ends up being a MASSIVE amount of paper dust, and there are quite a bit of sensors that need cleaned; significantly worse if there are finishing options. All in all, I like them for what they're intended for, but rarely are they sold properly.
