Max setup does not have anything with fuser.
This is well known problem for c560 and dcp700 machines when customer use kunstdruck paper.
There is option for gloss mode in printer driver which customer can use.
Second solution is to set some fuser NVM's which adjust pressure in fuser.

And have you got the parameter for the nvm? Because the option for gloss mode don't work...
the problem is only for the 560 or for the 550 also? I had a 550 and the toner never rubbed off

It's right maxsetup do not have anything with fuser but with amount of toner on ibt and finally on paper.
I think there is too much toner on paper and the fusing time is too short to melt and embedded in paper whole amount of. toner.
So, you can try to reduce the amount of toner using maxsetup procedure.
I have a problem with a xerox 560, the toner rubs off heavy papers when i print full black or full colored , i change 3 fuser and the problem is the same, i searched over the web and the xerox site also but i don't find solutions. I have a xerox 560 with fiery rip.
I would look at your printing preferences and make sure you select heavy as your paper type, then at the machine itself, make sure the tray you have your heavy paper in is also set to heavy (when you open and close the tray, set the type to heavy before pressing confirm). The machine has to know this information in order to adjust the fuser to the proper temperature to compensate for the heavier paper. The fuser must be hot enough to melt the plastic toner particles into the fibers of the paper to make it stick. Good Luck!
