I have a 3080P here with Fiery server. Tray #1 isn't properly detecting paper sizes. For instance I'll put in letter size paper (8.5x11) and it'll say it is B5 paper. I've tried calibrating it in admin mode with the paper tray calibration. Any ideas?

The description of the procedure starts on page 1235. Did you read this procedure? It is not intuitive. It uses some unusual paper sizes. In some of my high volume locations I cut cardboard to those sizes, and kept it stored on site to make it easier to adjust, and I've had to do it frequently.
On my highest volume machine I've had to replace the size VR when it would not consistently read the size correctly.If you'd like a serious answer to your request:
1) demonstrate that you've read the manual
2) demonstrate that you made some attempt to fix it.
3) if you're going to ask about jams include the jam code.
4) if you're going to ask about an error code include the error code.
5) You are the person onsite. Only you can make observations.

I have had to replace the connectors for the trays on the paper feed unit for this problem before but never on the machine. But most of my customers have air feed paper feed units so they rarely use the trays on the machine.Comment

I've ran the paper size procedure with no change. I cut some ledger to the required sizes. I also conducted the centering adjustment and i found the difference between line and center to be minimal (couple mm) Idk if i printed the right test pattern though. I've turned off K sizes and also changed all detect size settings to inches like synth mentioned. The tray is still showing 8.5x11 as B5.

your best bet is to try this to set the baseline.
4.3.55 Tray Size Adjustment (Tray Adjustment)
(1) Function
Adjust the size detection accuracy of each tray.
• Main body tray
• MB-506
• MB-508
• LU-202m
• LU-202XL
• LU-202XLm
• PF-602m
(2) Usage
Perform this adjustment when the paper size is detected wrongly.
(3) Procedure
1. "Service Mode Menu screen"
Press [01 Machine Adjustment].

▪ When you adjust the tray size of the LU-202m, LU-202XL, or LU-202XLm, press the tray down switch (SW100) twice, and
lower the up down plate to the lowest position.
When you adjust the tray size while the up down plate is at its upper position, accurate adjustment is not guaranteed.
▪ The up down plate of the MB-506 or MB-508 does not move down on the adjustment mode.
When you move down the plate, exit from the adjustment mode.
(You can adjust the tray size of the MB-506 or MB-508 even when the up down plate is not at its lowest position.)
2. "Machine Adjustment Menu screen"
Press [06 Tray adjustment].
3. "Tray Adjustment Menu screen"
Press [01 Tray Size adjustment ].
4. Select (Large) of the tray that you want to adjust.
5. Adjust the width of the side guide of the tray that you want to adjust to 297 mm with a scale.
6. Press [Start].
7. Select (Small) of the tray that you want to adjust.
Note
▪ For the PF-602m, LU-202m, LU-202XL, and LU-202XLm, the width of the side guide is more than 148 mm when it is reduced
at the maximum. Therefore, the tray (small) cannot be selected.
8. Adjust the width of the side guide of the tray that you want to adjust to 148 mm with a scale.
9. Press [Start].
